When should I stop fermenting?

The process of fermentation is considered to be done when the wine goes dry at 0 degrees Brix or when it has reached the level of sweet/dryness you desire. Dry wines are usually in the range of 0.2 to 0.3 percent, 1.0 to 5.0 percent for off-dry wines, and sweet wines fall usually in the range of 5.0 to 10 percent.
