What is chuhai made from?

The name chūhai is an abbreviation of "shōchū highball" (焼酎ハイボール). Traditional chūhai is made with Barley shōchū and carbonated water flavored with lemon, though some modern commercial variants use vodka in place of shōchū.

How long has shochu been around?

As far as can be determined from the Japanese historical record, shōchū appears to have been made since at least as far back as the 16th century. When the missionary Francis Xavier visited Kagoshima Prefecture in 1549, he recorded that "the Japanese drink arak made from rice [ ] but I have not seen a single drunkard.

Chemical analyses recently confirmed that the earliest alcoholic beverage in the world was a mixed fermented drink of rice, honey, and hawthorn fruit and/or grape.
