What causes protein haze in beer?

Colloidal haze is created when the proteins and polyphenols — plant-derived flavonoid compounds like tannins — in the wort or beer join together. “Colloidal” refers to particulate material that doesn't settle within the medium that contains it and, as such, can't be easily separated out with a filter or centrifuge.
