This increase in fermentable sugars can, in the presence of yeast, give rise to a slow secondary fermentation, which is referred to as 'hop creep. The main consequences of hop creep result in beer being out of specification in terms of alcohol, diacetyl and CO2 (Table 1).

Do hop pellets sink?

The quantity of dry hops to use really depends on the kind of beer you've brewed. Pellets break apart and sink to the bottom after a while, leaving behind a thick hops sludge, while whole hops remain intact and float on the surface.
